- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 lb fresh tomatillos
- 2 fresh jalapeños
- 1 medium onion, finely chopped
- 4 garlic cloves
- 6 cups low-sodium chicken broth
- 8 oz cream cheese, softened
- Juice of 2 limes
Instructions
- In a large pot, cover chicken breasts with water and boil for 20-25 minutes until cooked through. Shred the chicken using two forks.
- Preheat oven to broil. Broil tomatillos and jalapeños on a baking sheet for 5-7 minutes until charred. Cool slightly and remove skins.
- Blend roasted tomatillos, jalapeños, garlic, onion, and lime juice until smooth.
- In the pot with shredded chicken, add blended sauce and chicken broth. Stir over medium heat until blended.
- Reduce heat to low and stir in softened cream cheese until melted and incorporated.
- Serve hot with garnishes like radishes, cilantro, or avocado.
