  • 8 oz spaghetti or fettuccine
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts, lightly toasted
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves
  • 1 cup heavy cream
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, following package instructions. Drain and reserve some pasta water.
  2. In a food processor, blend basil, pine nuts, Parmesan cheese, and garlic until finely chopped. With the motor running, drizzle in olive oil until smooth.
  3. In a skillet over medium heat, combine the pesto with heavy cream and mix well.
  4. Add the drained pasta to the skillet and toss until evenly coated. If needed, add reserved pasta water to reach desired consistency.
  5. Season with salt and pepper to taste; serve immediately garnished with extra Parmesan.
