  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 cups kale (chopped; can substitute with spinach)
  • 4 medium Yukon Gold potatoes (cubed)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • ½ tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic. Chop potatoes into bite-sized pieces and tear kale into small bits.
  2. In a skillet over medium heat, brown the Italian sausage until fully cooked; drain excess grease.
  3. Transfer the sausage to a slow cooker and add the diced onion, minced garlic, chopped potatoes, red pepper flakes, and chicken broth—stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
