  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat until shimmering.
  2. Sear the seasoned chicken for about 5-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add fresh spinach and cook until wilted.
  4. Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Stir in sun-dried tomatoes and let simmer for a few minutes until slightly thickened.
  5. Mix in grated Parmesan cheese until melted smoothly. Return the chicken to the skillet, coating it thoroughly with the sauce.
  6. Serve immediately over pasta or with crusty bread and garnish with extra Parmesan if desired.
