Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp instant yeast
  • 1 tsp salt
  • 1 cup whole milk
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. In a bowl, mix flour, sugar, yeast, and salt. In another bowl, whisk together milk, eggs, and vanilla; combine wet and dry ingredients to form a soft dough.
  2. Knead on a floured surface for 5-7 minutes until elastic. Let rise in an oiled bowl covered with cloth until doubled in size (about 1 hour).
  3. Roll out the dough to 1/2 inch thick and cut into doughnut shapes. Allow to rise again for 30 minutes.
  4. Prepare custard by heating cream with vanilla; whisk egg yolks and sugar together, then gradually add hot cream to temper the yolks.
  5. Fry doughnuts in hot oil until golden brown (about 1 minute per side). Cool slightly before filling with custard.
  6. Sprinkle sugar on top and caramelize using a torch or broiler until golden.
