  • 8 oz Dan Dan noodles
  • 1 cup ground pork (80% lean)
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp Sichuan peppercorns, toasted and ground
  • 2 tbsp sesame paste
  • 3 tbsp soy sauce
  • 2 tbsp chili oil (adjust to taste)
  • Green onions, chopped (for garnish)
  • Crushed peanuts (for garnish)

Instructions

  1. 1. Cook the noodles according to package instructions until al dente. Drain and reserve some pasta water.
  2. 2. In a bowl, mix sesame paste, soy sauce, chili oil, garlic, ginger, and Sichuan peppercorns until smooth.
  3. 3. In a skillet over medium heat, cook ground pork until browned and crumbly.
  4. 4. Add cooked noodles to the skillet with pork and pour over the sauce. Toss until well combined.
  5. 5. Serve garnished with green onions and crushed peanuts.
