  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • ½ cup colorful sprinkles (plus extra for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Bake crust for 10 minutes until golden; cool.
  4. Beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
  5. Add eggs one at a time, mixing gently. Fold in half of the sprinkles.
  6. Pour filling over cooled crust and bake for 50-60 minutes until slightly jiggly in the center.
  7. Let cool at room temperature, then refrigerate for at least four hours before serving with remaining sprinkles on top.
