  • 1 whole chicken (45 pounds)
  • 1/2 cup unsalted butter, softened
  • 6 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh thyme, chopped
  • 2 sprigs fresh rosemary, chopped
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 1/2 cup white wine (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat dry with paper towels.
  3. In a bowl, combine softened butter, minced garlic, thyme, rosemary, salt, and pepper.
  4. Rub half of the garlic butter mixture under the skin and inside the chicken cavity.
  5. Stuff the cavity with lemon wedges and any remaining herbs.
  6. Place the seasoned chicken breast-side up in a roasting pan and roast for about 1 hour 15 minutes until it reaches an internal temperature of 165°F (75°C), basting occasionally with pan juices.
