Instructions
- Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 25-30 minutes until golden and crispy.
- Season steak pieces with salt and pepper. In a skillet over medium-high heat, add olive oil and sear steak bites in batches for 3-4 minutes until browned. Remove from skillet.
- In the same skillet, melt butter over medium heat and sauté garlic until fragrant (about 1 minute). Return steak bites to the skillet, tossing to coat in the garlic butter.
- Stir in freshly chopped herbs before serving hot alongside roasted potatoes.
