  • 2 lbs Yukon Gold Potatoes
  • 6 slices Bacon
  • 1 medium Red Onion, thinly sliced
  • ½ cup Apple Cider Vinegar
  • 2 tbsp Dijon Mustard
  • ½ cup Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. Boil the Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly before slicing.
  2. In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels, reserving the drippings in the pan.
  3. Sauté the red onion in the bacon drippings until soft. Stir in apple cider vinegar and Dijon mustard until combined.
  4. In a large bowl, combine sliced potatoes with the onion mixture and crumbled bacon. Toss gently to combine.
  5. Season with salt and pepper, then fold in fresh parsley.
  6. Serve warm or chill for at least an hour before serving.
