Ingredients

  • ½ cup unsulfured molasses
  • ¾ cup brown sugar
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup unsalted butter, melted
  • 8 oz full-fat cream cheese (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix molasses, brown sugar, eggs, milk, and melted butter until smooth.
  4. Gradually combine wet ingredients with the dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool. For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and vanilla until smooth.
  7. Frost cooled cupcakes before serving.
