  • 1 package (15.25 oz) gingerbread cake mix
  • 3 large eggs
  • 1/2 cup melted butter (cooled slightly)
  • 2 tsp gingerbread spice
  • 1/2 cup brewed espresso or strong coffee
  • 8 oz cream cheese frosting
  • 8 oz melting chocolate or candy melts
  • Festive sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking pan.
  2. In a bowl, mix cake mix, eggs, melted butter, gingerbread spice, and espresso until smooth. Pour into the pan.
  3. Bake for 25-30 minutes until golden brown. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  4. Crumble the cooled cake into fine pieces in a large bowl. Mix in cream cheese frosting until combined but not overly moist.
  5. Roll mixture into 1-inch balls and place on parchment-lined baking sheet. Insert lollipop sticks halfway into each ball and chill for at least 30 minutes.
  6. Melt chocolate according to package instructions. Dip each chilled pop into chocolate until coated, allowing excess to drip off before placing back on the parchment paper. Add sprinkles if desired.
