- 8 oz melting chocolate or candy melts

Instructions
- Preheat oven to 350°F (175°C). Grease a baking pan.
- In a bowl, mix cake mix, eggs, melted butter, gingerbread spice, and espresso until smooth. Pour into the pan.
- Bake for 25-30 minutes until golden brown. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
- Crumble the cooled cake into fine pieces in a large bowl. Mix in cream cheese frosting until combined but not overly moist.
- Roll mixture into 1-inch balls and place on parchment-lined baking sheet. Insert lollipop sticks halfway into each ball and chill for at least 30 minutes.
- Melt chocolate according to package instructions. Dip each chilled pop into chocolate until coated, allowing excess to drip off before placing back on the parchment paper. Add sprinkles if desired.
