Ingredients

Scale
  • 4 large fresh eggs
  • 1 can (14 oz) crushed tomatoes
  • 1 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add crushed tomatoes and oregano; simmer for 5 minutes.
  3. Stir in fresh spinach until wilted (about 2 minutes).
  4. Transfer the mixture to the baking dish and create wells for the eggs. Crack an egg into each well and sprinkle with feta cheese.
  5. Bake for 15-20 minutes, until the eggs are set but still slightly runny in the yolks. Serve hot with crusty bread.
