- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 2 tsp dried oregano
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 4 oz feta cheese, crumbled
- Pita bread or cooked rice (for serving)
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Preheat grill or skillet to medium-high heat.
- Grill or sauté chicken for about 6-7 minutes on each side until golden brown and cooked through. Let rest for five minutes.
- While resting, chop cucumber and halve cherry tomatoes; combine with red onion in a bowl.
- Slice chicken and layer over rice or pita bread. Top with chopped veggies and crumbled feta.
- Drizzle with additional olive oil or lemon juice before serving.
