  • 23 boneless, skinless chicken breasts (about 1 pound)
  • 4 cups low-sodium chicken broth
  • 2 fresh lemons (juiced)
  • 2 medium carrots (chopped)
  • 2 celery stalks (diced)
  • 1/4 cup fresh dill or parsley (chopped)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare your ingredients by chopping the carrots and celery into small pieces.
  2. In a large pot over medium heat, add olive oil and sauté the chopped carrots and celery until softened, about 5 minutes.
  3. Add the chicken breasts and pour in enough chicken broth to cover them comfortably. Bring to a gentle boil.
