Ingredients

  • 1 lb fresh green beans, trimmed
  • 4 tbsp unsalted butter
  • 1 cup thinly sliced shallots
  • ½ cup raw hazelnuts, toasted

Instructions

  1. Blanch the green beans in boiling salted water for 3-4 minutes, then transfer them to an ice bath.
  2. In a skillet over medium heat, melt 1 tablespoon of butter and sauté shallots until golden brown, about 5-7 minutes.
  3. Toast hazelnuts on a baking sheet in a preheated oven at 350°F (175°C) for about 10 minutes.
  4. In the same skillet used for the shallots, melt the remaining butter until browned and nutty, about 4 minutes.
  5. Toss the blanched green beans with the brown butter, crispy shallots, hazelnuts, salt, pepper, and lemon zest.
