Ingredients

  • 2 medium Yukon Gold potatoes (about 500g)
  • 150g crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean and chop the potatoes into bite-sized pieces.
  3. In a bowl, toss the potatoes with olive oil, garlic, salt, pepper, and half of the herbs until well-coated.
  4. Transfer the mixture to a baking dish and crumble feta over the top. Sprinkle with remaining herbs.
