- 3 tbsp extra virgin olive oil

- Juice and zest of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the Cornish hens under cold water and pat dry with paper towels.
- Rub olive oil over each hen; season generously with salt, pepper, garlic, and herbs.
- Squeeze lemon juice over the hens and place lemon halves inside their cavities.
- Roast hens breast-side up in a roasting pan for about 1 hour or until they reach an internal temperature of 165°F (75°C).
- Let rest for 10-15 minutes before carving.
