Description

Herb-Roasted Cornish Hens are a show-stopping centerpiece for any festive gathering. With their crispy skin and succulent, juicy meat infused with fresh herbs and zesty lemon, this dish will impress your guests and leave them craving more.


Ingredients

  • 2 Cornish Hens (11.5 lbs each)
  • 3 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh parsley, chopped
  • 4 garlic cloves, minced
  • Juice and zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the Cornish hens under cold water and pat dry with paper towels.
  3. Rub olive oil over each hen; season generously with salt, pepper, garlic, and herbs.
  4. Squeeze lemon juice over the hens and place lemon halves inside their cavities.
  5. Roast hens breast-side up in a roasting pan for about 1 hour or until they reach an internal temperature of 165°F (75°C).
  6. Let rest for 10-15 minutes before carving.
