  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure honey
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1/2 tsp freshly ground black pepper
  • 8 wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a medium bowl, whisk together soy sauce, honey, garlic, olive oil, lime juice, and black pepper.
  3. Cut chicken into bite-sized cubes and place them in a resealable bag. Pour the marinade over the chicken and seal tightly. Refrigerate for at least 1 hour or overnight.
  4. Preheat grill to medium-high heat (375°F).
  5. Thread marinated chicken onto soaked skewers with space between pieces.
  6. Grill skewers for 10-15 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F and has nice grill marks.
