  • 1 lb boneless, skinless chicken breasts (approximately 34 breasts), diced
  • 3 cloves fresh garlic, minced
  • 1 cup mixed bell peppers, sliced
  • 1 cup snow peas, trimmed
  • 8 oz egg noodles (dry)
  • 3 tbsp honey
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 tsp fresh ginger root, grated
  • 1 tbsp cornstarch
  • 2 green onions, chopped for garnish

Instructions

  1. Prepare your ingredients by chopping the chicken and slicing the bell peppers and snow peas.
  2. In a bowl, mix honey, soy sauce, minced garlic, grated ginger, and cornstarch. Add the chicken and marinate for at least 15 minutes.
  3. Heat sesame oil in a large skillet over medium-high heat. Sauté bell peppers and snow peas until slightly tender (about 3-4 minutes).
  4. Push the veggies to one side of the skillet and add the marinated chicken. Cook until browned and cooked through (approximately 5-7 minutes).
  5. Add cooked egg noodles and any remaining marinade to the skillet; stir everything together until heated through (about 2-3 minutes).
  6. Garnish with chopped green onions before serving hot.
