  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup hot honey sauce (mix of ½ cup honey and 2 tbsp hot sauce)
  • Salt and pepper to taste
  • ½ cup vegetable oil for frying

Instructions

  1. Pound chicken breasts to an even thickness of about half an inch.
  2. In three bowls, place seasoned flour, beaten eggs, and panko breadcrumbs mixed with salt and pepper.
  3. Coat each chicken breast in flour, dip in egg wash, then coat generously with panko breadcrumbs.
  4. Heat oil in a skillet over medium-high heat. Fry cutlets for 4-5 minutes per side until golden brown.
  5. Remove from skillet and drizzle liberally with hot honey sauce while hot.
  6. Plate alongside fresh greens or roasted vegetables.
