  • 3 cups cooked shredded chicken
  • 1 cup diced fresh jalapeños
  • 8 oz full-fat cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large flour tortillas
  • 1 tsp garlic powder
  • 2 tbsp olive oil (for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil chicken breasts in salted water for 15-20 minutes until cooked through. Shred once cooled.
  3. In a mixing bowl, combine shredded chicken, diced jalapeños, cream cheese, garlic powder, salt, pepper, cheddar cheese, and mozzarella. Mix until well combined.
  4. Place about two tablespoons of filling on one end of a tortilla and roll tightly. Secure with toothpicks if necessary.
  5. Arrange taquitos seam-side down on a lined baking sheet and brush with olive oil.
  6. Bake for 20-25 minutes until golden brown and crispy.
  7. Let cool slightly before serving with salsa or your choice of dipping sauce.
