  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp sake or mirin
  • 1/2 cup cornstarch
  • Vegetable oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a bowl, combine soy sauce, ginger, garlic, and sake or mirin. Add the chicken and marinate for at least 30 minutes.
  3. Remove chicken from marinade; let excess drip off. In another bowl, season cornstarch with salt and pepper, then dredge each piece of chicken until well-coated.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken in batches for about 4-5 minutes until golden brown and crispy. Flip halfway through cooking.
  5. Drain on paper towels and serve warm with lemon wedges.
