Ingredients

  • 8 flour or corn tortillas
  • 2 cups shredded rotisserie chicken
  • 1 can (15 oz) canned black beans, rinsed
  • 2 cups enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (for topping)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a large baking dish with nonstick cooking spray.
  3. Layer half of the tortillas at the bottom of the dish.
  4. Spread half of the shredded chicken over the tortillas, then layer half of the black beans and half of the enchilada sauce. Sprinkle half of the cheese on top.
  5. Repeat the layering process with the remaining ingredients.
  6. Bake for 25-30 minutes until everything is heated through and cheese is bubbly.
  7. Garnish with fresh cilantro and serve with sour cream.
