- 8 flour or corn tortillas
- 2 cups shredded rotisserie chicken
- 1 can (15 oz) canned black beans, rinsed
- 2 cups enchilada sauce
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (for topping)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Spray a large baking dish with nonstick cooking spray.
- Layer half of the tortillas at the bottom of the dish.
- Spread half of the shredded chicken over the tortillas, then layer half of the black beans and half of the enchilada sauce. Sprinkle half of the cheese on top.
