  • 1/4 cup water
  • 1/4 cup powdered sugar (for coating)

Instructions

  1. Prepare your ingredients by rinsing and drying the lemons before zesting and juicing them.
  2. In a saucepan, combine granulated sugar and water over medium heat, stirring until dissolved. Remove from heat and stir in lemon juice and zest.
  3. Return to low heat and simmer without stirring until it reaches 250°F (121°C) on a candy thermometer.
  4. Pour onto a parchment-lined baking sheet and let cool slightly. Use a spoon to scoop out small drops.
  5. Roll cooled drops in powdered sugar to prevent sticking, then allow them to harden at room temperature for about an hour.
