  • 1 cup long-grain white rice
  • 2 tbsp taco seasoning
  • 1 cup diced bell peppers (mixed colors)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (for serving)
  • ¼ cup chopped green onions (for garnish)
  • Fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground chicken until no longer pink.
  2. Add diced bell peppers and taco seasoning; sauté for about 3 minutes until softened.
  3. Stir in rinsed rice and diced tomatoes until evenly combined.
  4. Pour in 2 cups of chicken broth; bring to a simmer, cover, and reduce heat to low for about 20 minutes or until rice is cooked.
  5. Remove from heat; sprinkle cheddar cheese on top and cover briefly until melted.
  6. Serve hot, topped with sour cream, green onions, and cilantro if desired.
