  • 1 lb ground beef or turkey
  • 2 medium aubergines (eggplants), sliced into 1/4-inch rounds
  • 2 cups fresh tomatoes, diced (or canned)
  • 1 large sweet yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 cups Mexican blend cheese, shredded
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare the aubergines by washing and slicing them. Sprinkle with salt and let sit for 30 minutes to draw out moisture.
  2. In a large skillet over medium heat, warm olive oil. Sauté chopped onions and minced garlic until translucent (about 5 minutes).
  3. Add ground beef or turkey to the skillet. Cook until browned (7-10 minutes).
  4. Stir in diced tomatoes and spices (cumin, paprika, chili powder, salt, and pepper). Simmer on low for 15 minutes.
  5. Preheat oven to 375°F (190°C). In a baking dish, layer half of the aubergine slices followed by half of the meat mixture. Repeat layers.
  6. Top with shredded cheese. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden.
