Ingredients

  • 1 sheet puff pastry (thawed)
  • 1/2 cup pesto sauce
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface until about 1/8 inch thick. Cut into squares or circles.
  3. Place the pastry pieces on a lined baking tray. Spread pesto sauce onto each piece, leaving a border around the edges.
  4. Arrange halved cherry tomatoes cut-side up on top of the pesto.
  5. Drizzle with olive oil and season with salt and pepper. Top generously with grated Parmesan cheese.
  6. Bake for 15-20 minutes until the pastry is golden brown and puffed.
  7. Let cool slightly before serving warm.
