  • 1/3 cup vegetable oil
  • 1 cup grated carrots (about 2 medium carrots)
  • Optional: 1/2 cup chopped walnuts or raisins

Instructions

  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, whisk eggs and vegetable oil until smooth. Stir in grated carrots.
  4. Gently fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  5. If using, fold in walnuts or raisins.
  6. Distribute batter evenly into muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean from the center. Let cool slightly before serving.
