  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • Zest and juice of 1 lemon
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then stir in milk, vanilla, lemon zest, and lemon juice until combined.
  5. Fold in the dry ingredients gently until just mixed; do not overmix.
  6. Carefully fold in fresh blueberries.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–60 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
