Ingredients

Scale
  • 1 cup almond flour
  • 1 1/2 cups powdered sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1 tsp pink food coloring gel
  • 1/2 cup heavy cream
  • 8 oz dark chocolate (60-70% cocoa content)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together in a bowl until light and airy.
  3. In another bowl, whip egg whites until foamy; gradually add granulated sugar and continue whipping until glossy peaks form.
  4. Fold in pink food coloring gel until desired shade is reached, then gently incorporate the dry ingredients into the meringue.
  5. Transfer the batter to a piping bag and pipe small rounds onto prepared sheets; tap sheets gently to remove air bubbles.
  6. Let piped macarons rest for 30 minutes before baking for 15-18 minutes or until they lift easily from parchment paper.
  7. For the ganache, heat heavy cream until simmering, then pour it over chopped dark chocolate; let sit for 5 minutes before stirring until smooth.
  8. Once macarons have cooled, sandwich them with chocolate ganache filling.
