  • 1 cup dried porcini mushrooms
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 cloves fresh garlic, minced
  • 2 cups vegetable broth (low-sodium)
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Soak dried porcini mushrooms in warm water for about 20 minutes until plump. Reserve some soaking liquid.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté for about 5 minutes until translucent.
  3. Add soaked mushrooms and reserved soaking liquid to the skillet. Cook for around 10 minutes until mushrooms are tender.
  4. Pour in vegetable broth and balsamic vinegar; simmer for 5-7 minutes until the sauce thickens slightly.
  5. Sprinkle with chopped parsley before serving.
