  • 8 oz Portobello mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pappardelle pasta in salted boiling water until al dente (3-5 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (1-2 minutes).
  3. Add sliced Portobello mushrooms to the skillet and cook until tender (5-7 minutes).
  4. Lower the heat and stir in heavy cream and grated Parmesan cheese. Simmer until smooth (2-3 minutes).
  5. Toss the cooked pappardelle in the skillet with the mushroom sauce; add reserved pasta water if needed for consistency.
