  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 2 large eggs
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 4 oz softened cream cheese
  • Dash of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, spices, and salt until well combined.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  4. Gradually add dry ingredients to the wet mixture; stir gently until just combined.
  5. In a small bowl, beat cream cheese with a couple tablespoons of sugar until smooth.
  6. Pour half the pumpkin batter into the prepared pan. Spoon dollops of cream cheese mixture over it and top with remaining batter. Swirl gently.
  7. Bake for about 60-70 minutes or until a toothpick comes out clean. Cool in the pan for ten minutes before transferring to a wire rack.
