  • 4 boneless pork chops (about 1 inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the schnitzels by placing pork chops between plastic wrap and pound to about half an inch thick.
  2. Set up a dredging station with flour seasoned with salt and pepper, beaten eggs, and panko breadcrumbs.
  3. Dredge each pork chop in flour, then dip in egg, and finally coat with breadcrumbs.
  4. Heat oil in a skillet over medium heat and fry schnitzels for 3-4 minutes on each side until golden brown. Remove from pan.
  5. In the same pan, sauté garlic until fragrant; add sliced mushrooms and cook until softened.
  6. Pour in heavy cream and lemon juice; season with salt and pepper. Simmer for 3-5 minutes until slightly thickened.
  7. Serve schnitzels topped with creamy mushroom sauce and sprinkle with parsley.
