  • 1 tbsp unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • For the Cream Cheese Frosting: 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar and vegetable oil until blended. Add eggs one at a time, mixing well. Stir in buttermilk, vanilla extract, and red food coloring until smooth.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Fill cupcake liners halfway with batter. Dollop some reserved cocoa batter on top and swirl gently using a toothpick.
  6. Bake for 18–20 minutes or until a toothpick comes out clean. Cool before frosting.
