  • 2 cups cherry tomatoes
  • 1 cup fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread cherry tomatoes on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until burst and caramelized.
  3. In a pot of boiling salted water, cook the orzo according to package instructions (about 8-10 minutes). Drain and set aside.
  4. In a large bowl, combine roasted tomatoes with cooked orzo. Gently mix in torn basil leaves and grated Parmesan. Drizzle with balsamic vinegar.
  5. Toss all ingredients together until well combined. Adjust seasoning if necessary before serving warm or chilled.
