  • 2 cups fresh tomatoes, chopped (or one can of diced tomatoes)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion for about 5 minutes until translucent; add garlic and cook for an additional minute.
  2. Add zucchini, bell pepper, and eggplant. Cook for about 8 minutes until softened.
  3. Stir in tomatoes and vegetable broth. Bring to a simmer, stirring occasionally.
  4. Add herbs and season with salt and pepper. Simmer for approximately 20 minutes.
