  • 4 Italian sausages (pork or chicken)
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cups Brussels sprouts, halved
  • 2 cups carrots, sliced into sticks
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine Brussels sprouts, carrots, and red onion. Drizzle with olive oil, season with salt and pepper, then toss until well-coated.
  3. In another bowl, whisk together maple syrup and Dijon mustard until smooth.
  4. On a large baking sheet, place sausages on one side and spread the veggie mixture on the other side. Drizzle the glaze over both.
  5. Roast in the oven for about 25-30 minutes or until sausages are browned and veggies are tender. Stir halfway through for even cooking.
  6. Serve directly from the pan or transfer to plates, drizzling any remaining glaze on top.
