  • 1 cup jasmine rice
  • 1 cup pineapple chunks (fresh or drained canned)
  • 1 cup bell peppers (chopped; mix of red, yellow, green)
  • 2 green onions (sliced)
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Cook jasmine rice according to package instructions; use broth for extra flavor.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add garlic and ginger; sauté until fragrant.
  3. Add shrimp to the pan; cook until they are pink and opaque (about 3-5 minutes). Remove shrimp from the pan.
  4. In the same pan, add chopped bell peppers and pineapple chunks; sauté until slightly softened.
  5. Return shrimp to the pan along with cooked rice and soy sauce. Stir until well combined and heated through.
