  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, sliced
  • 2 bell peppers (1 red, 1 green), sliced
  • 2 tbsp taco seasoning
  • 1 cup salsa (mild or spicy)
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream

Instructions

  1. Prepare your ingredients: slice the onion and bell peppers, and mince the garlic.
  2. Layer the chicken at the bottom of the slow cooker. Top with onions, bell peppers, garlic, and taco seasoning. Pour salsa over everything.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. After cooking, shred the chicken with two forks and mix it back into the sauce.
  5. Assemble burritos by filling tortillas with the mixture; add cheese and sour cream before rolling tightly.
  6. Serve warm with extra salsa or guacamole if desired.
