  • 2 lbs beef chuck roast
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 inch fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 8 oz flat rice noodles
  • Sliced green onions (for topping)
  • Toasted sesame seeds (for topping)

Instructions

  1. Cut the beef chuck roast into large chunks and season with salt and pepper. Place it in the slow cooker.
  2. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and beef broth until combined. Pour over the beef.
  3. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until the beef is tender.
  4. About 15 minutes before serving, cook rice noodles according to package instructions. Drain them.
  5. Shred the beef in the slow cooker using two forks. Add cooked noodles and stir until well combined.
  6. Serve topped with sliced green onions and sesame seeds.
