- 1 cup uncooked white or brown rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- Italian herbs to taste
Instructions
- Wash the bell peppers, slice off the tops, and remove the seeds. Set aside.
- In a skillet over medium heat, sauté chopped onions in oil until translucent. Add minced garlic and ground meat; cook until browned.
- Stir in rice and diced tomatoes; season with salt, pepper, and herbs. Mix well.
- Carefully stuff each bell pepper with the filling and place them upright in the slow cooker.
- Cover and cook on low for 6 hours or high for 3 hours until peppers are tender.
- In the last 10 minutes of cooking, sprinkle cheese on top of each pepper; cover until melted.
