  • 2 lamb shanks (about 2 lbs)
  • 1 thumb-sized piece of fresh ginger, minced
  • 4 garlic cloves, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tbsp cornstarch

Instructions

  1. Finely chop the garlic and ginger.
  2. In a skillet over medium-high heat, brown the lamb shanks on all sides until golden. Transfer to the slow cooker.
  3. Whisk together soy sauce, brown sugar, garlic, ginger, rice vinegar, and cornstarch until smooth.

  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Once cooked, carefully remove the lamb from the slow cooker and serve with extra sauce drizzled on top.
