  • 1 package (16 oz) phyllo dough, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 medium onion, finely chopped
  • 2 tbsp fresh dill, chopped
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  3. Add chopped spinach to the skillet and cook until wilted (3-4 minutes). Remove from heat.
  4. Stir in crumbled feta and fresh dill; season with salt and pepper.
  5. On a clean surface, lay out one sheet of phyllo dough and brush lightly with olive oil. Layer five sheets in total, brushing each with olive oil.
  6. Spoon the spinach mixture along one edge of the layered phyllo. Fold sides over the filling and roll into a log shape. Place seam-side down on a parchment-lined baking sheet.
  7. Brush the top with remaining olive oil and bake for 25-30 minutes until golden brown.
