  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chili powder or cayenne pepper (to taste)
  • 2 cups fresh spinach or kale
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent (about 5 minutes).
  2. Stir in carrots and celery; cook for an additional 3-4 minutes.
  3. Add minced garlic, cumin, and coriander; sauté for another minute until fragrant.
  4. Pour in lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes until lentils are tender.
  5. In the last few minutes of cooking, add spinach or kale. Season with lemon juice, salt, and pepper before serving.
