  • 2 cups ripe pineapple, chopped
  • 2 jalapeños, sliced (seeds removed for less heat)
  • 1/2 cup red onion, chopped
  • 1/4 cup light brown sugar
  • 1/4 cup cider vinegar
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp ground ginger

Instructions

  1. Prep by peeling and chopping the pineapple into small chunks.
  2. In a medium pot over medium heat, combine chopped pineapple, sliced jalapeños, red onion, brown sugar, cider vinegar, minced garlic, salt, and ground ginger. Stir well.
