  • 1 lb shrimp (fresh or thawed from frozen)
  • 8 oz egg noodles
  • 4 cloves garlic, minced
  • 1 tsp Szechuan peppercorns
  • 2 tbsp red chili paste (adjust to taste)
  • 4 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup bell peppers (optional), sliced

Instructions

  1. Prep the shrimp by peeling and deveining them. Cook the egg noodles according to package instructions until al dente.
  2. In a large skillet over medium heat, add vegetable oil. Once hot, sauté garlic and Szechuan peppercorns until fragrant (about 30 seconds).
  3. Add shrimp to the skillet, cooking until pink and opaque (about 3-4 minutes). If using bell peppers, toss them in now until slightly tender.
  4. Mix soy sauce, red chili paste, and cornstarch mixture in a bowl until smooth; pour over shrimp in the skillet.
  5. Add cooked noodles to the pan and toss gently until everything is well coated in sauce. Stir in green onions if desired.
  6. Serve immediately while hot, garnished with extra green onions or sesame seeds.
