  • 2 cups fresh spinach, packed
  • 1 cup crumbled feta cheese
  • 4 medium flour tortillas
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the fresh spinach under cold water and pat dry.
  2. In a skillet over medium heat, sauté the spinach in 1 tablespoon of olive oil until wilted (about 3 minutes). Add garlic powder, salt, and pepper; stir to combine.
  3. Place one tortilla on a flat surface. Spread half of the sautéed spinach on one side, then sprinkle with crumbled feta.
  4. Fold the tortilla in half and cook in a skillet with remaining oil over medium heat until golden brown on both sides (3-4 minutes each).
  5. Slice into wedges and serve warm.
