  • 4 cups fresh spinach
  • 1 lb Italian sausage (spicy or mild)
  • 1 cup cooked long-grain white rice
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Sauté onions and garlic until softened, about 3 minutes.
  3. Add Italian sausage; cook until browned, around 5 minutes.
  4. Stir in spinach until wilted (2 minutes). Mix in cooked rice, heavy cream, and half of the Parmesan.
  5. Transfer mixture to a greased baking dish; top with remaining Parmesan.
  6. Bake for 25-30 minutes or until golden brown and bubbly.
